Delightful Chocolate Mud Bars made with rich chocolate, perfect for sharing or indulging.


Ingredients

  • 0.75 cup unsalted butter (melted and slightly cooled)
  • 1 cup granulated sugar
  • 0.5 cup light brown sugar (packed)
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 0.5 tsp baking powder
  • 0.5 tsp fine sea salt
  • 0.5 tsp instant espresso powder (optional)
  • 1 cup semisweet chocolate chips (for batter)
  • 0.5 cup heavy cream (for ganache)
  • 1 cup semisweet chocolate chips (for ganache)
  • 1 tbsp unsalted butter (for ganache, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a baking pan with parchment paper.
  2. In a large bowl, combine the melted butter, granulated sugar, and light brown sugar. Mix until well combined.
  3. Add the eggs and vanilla extract to the mixture, stirring until smooth.
  4. In another bowl, sift together the all-purpose flour, cocoa powder, baking powder, sea salt, and instant espresso powder (if using).
  5. Gradually add the dry ingredients to the wet ingredients, mixing well until fully incorporated.
  6. Fold in 1 cup of chocolate chips into the batter.
  7. Pour the batter into the prepared baking pan, spreading it evenly.
  8. Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  9. While the bars are cooling, prepare the ganache by heating the heavy cream in a small saucepan over medium heat until it begins to simmer.
  10. Remove from heat and add 1 cup of chocolate chips and 1 tablespoon of butter (if desired). Stir until the chocolate has melted and the mixture is smooth.
  11. Pour the ganache over the cooled bars, spreading it evenly.
  12. Let the ganache set for a bit before cutting into squares.

Notes

Store Chocolate Mud Bars in an airtight container at room temperature for 3-5 days. For longer shelf life, refrigerate them but allow to come to room temperature before serving.
