- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 pound ground beef
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon dried thyme
- 1 (28 ounce) can crushed tomatoes
- 6 cups beef broth
- 1 medium head of cabbage, chopped
- 1 cup cooked rice (long grain preferred)
- Optional: Fresh parsley, for garnish
- Optional: A dollop of sour cream
Instructions
- Heat olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute until fragrant.
- Add ground beef to the pot and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Season the beef with salt, pepper, paprika, and thyme. Stir to combine.
- Pour in the crushed tomatoes and beef broth. Bring the mixture to a simmer.
- Add the chopped cabbage to the pot. Simmer until the cabbage is tender, about 15-20 minutes.
- Stir in the cooked rice. Heat through for another 5 minutes.
- Ladle the soup into bowls. Garnish with fresh parsley and sour cream, if desired.
