Ingredients

  • For The Crust:
  • 1 ½ cups all purpose flour
  • ½ teaspoon salt
  • ½ cup (1 stick) cold unsalted butter, cut into cubes
  • 4–6 tablespoons ice water
  • For The Filling:
  • 1 ½ cups heavy cream
  • 4 large egg yolks
  • ½ cup granulated sugar
  • ¼ cup strong brewed coffee, cooled
  • 2 tablespoons Irish whiskey
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Grated chocolate, for garnish (optional)

Instructions

  1. 1. Prepare the Crust: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. 2. Add Water and Form Dough: Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Be careful not to overmix.
  3. 3. Chill the Dough: Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  4. 4. Roll Out the Dough: On a lightly floured surface, roll out the dough to a 12 inch circle.
  5. 5. Transfer to Pie Plate: Carefully transfer the dough to a 9 inch pie plate. Trim and crimp the edges as desired.
  6. 6. Prebake the Crust: Prick the bottom of the crust with a fork. Line the crust with parchment paper and fill with pie weights or dried beans. Bake in a preheated oven at 375°F (190°C) for 15 minutes. Remove the weights and parchment paper, and bake for an additional 5 10 minutes, or until lightly golden brown.
  7. 7. Cool the Crust: Let the crust cool completely before filling.
  8. 8. Make the Filling: In a saucepan, heat the heavy cream over medium heat until it just starts to simmer. Do not boil.
  9. 9. Whisk Egg Yolks and Sugar: In a separate bowl, whisk together the egg yolks and sugar until pale and smooth.
  10. 10. Temper the Egg Mixture: Slowly pour a small amount of the hot cream into the egg yolk mixture, whisking constantly to prevent the eggs from curdling.
  11. 11. Combine Mixtures: Pour the egg yolk mixture back into the saucepan with the remaining cream. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5 7 minutes).
  12. 12. Remove From Heat: Remove the saucepan from the heat and stir in the cooled coffee, Irish whiskey, vanilla extract, and salt.
  13. 13. Pour Into Crust: Pour the filling into the cooled pie crust.
  14. 14. Chill the Pie: Cover the pie with plastic wrap, pressing it gently onto the surface of the filling to prevent a skin from forming. Refrigerate for at least 4 hours, or preferably overnight, to allow the filling to set completely.
  15. 15. Garnish and Serve: Before serving, garnish with grated chocolate, if desired. Slice and enjoy!
