- 4 cups fresh dandelion flowers (picked responsibly)
- 4 cups water
- 4 cups granulated sugar
- 1 lemon, juiced
Instructions
- Gently rinse the dandelion flowers and spread them out to dry.
- In a large pot, combine dandelion flowers and water. Bring to a boil, then simmer for 30 minutes.
- Strain the mixture through a fine mesh sieve or cheesecloth. Discard the flowers.
- Return the strained liquid to the pot. Add the sugar and lemon juice. Stir to dissolve.
- Bring to a gentle boil, then simmer for 45 60 minutes, or until thickened.
- Check for doneness by placing a spoonful on a chilled plate.
- Cool slightly and pour syrup into sterilized jars or bottles. Store in the refrigerator.
