Sweet and chewy dandelion and honey gummy bears, a surprisingly delicious natural treat you can feel good about sharing!
Ingredients

- 2 cups fresh dandelion flowers, petals only, rinsed well
- 3 cups boiling water
- 1/2 cup dandelion flower infusion
- 1/4 cup raw honey
- 3 tablespoons gelatin powder (unflavored)
- 1 teaspoon lemon juice (optional)
Instructions
- 1. Make the Dandelion Infusion: Place the dandelion petals in a heatproof bowl. Pour the boiling water over the petals, stir gently, and let steep for at least 30 minutes, or up to an hour.
- 2. Strain the Infusion: Strain the dandelion infusion through a fine mesh sieve or cheesecloth.
- 3. Bloom the Gelatin: In a small bowl, sprinkle the gelatin powder over 1/4 cup of the cooled dandelion infusion. Let it sit for 5 minutes to bloom.
- 4. Combine and Heat: In a small saucepan, combine the remaining 1/4 cup dandelion infusion and the honey. Heat over low heat, stirring constantly, until the honey is fully dissolved. Do not boil the mixture.
- 5. Dissolve the Gelatin: Add the bloomed gelatin to the warm honey and dandelion mixture. Stir constantly until the gelatin is completely dissolved and the mixture is smooth. If adding lemon juice, stir it in now.
- 6. Pour into Molds: Carefully pour the mixture into your gummy bear molds.
- 7. Chill and Set: Place the filled molds in the refrigerator for at least 2 hours, or preferably overnight.
- 8. Unmold and Enjoy: Once the gummy bears are firm, gently pop them out of the molds.
