Description
The most elegant and easy Cucumber Cream Cheese Sandwiches made with thinly sliced English cucumber chive and onion cream cheese fresh dill and soft white bread trimmed and cut into beautiful triangles. The perfect Mother’s Day tea sandwich and spring luncheon finger food ready in just 10 minutes.
Ingredients
1 English Cucumber sliced as thin as possible
8 slices Soft White Bread
2 to 3 oz Chive and Onion Cream Cheese softened
Fresh Dill optional but recommended
Flake Sea Salt and Freshly Ground Black Pepper
Instructions
1. Slice English cucumber as thinly as possible about 1/8 inch thick.
2. Place cucumber slices on paper towels, sprinkle with salt, and let rest 5 to 30 minutes to draw out moisture.
3. Pat cucumber slices firmly dry with additional paper towels.
4. Ensure cream cheese is fully softened to room temperature.
5. Spread cream cheese generously on one side of all 8 bread slices reaching all the way to the edges.
6. Arrange drained cucumber slices in an overlapping layer over the cream cheese on 4 bread slices.
7. Scatter fresh dill over cucumber and add flake salt and black pepper.
8. Top with remaining 4 bread slices cream cheese side facing down. Press gently to seal.
9. Cut all 4 crusts off each sandwich with a sharp knife.
10. Cut each sandwich into 4 squares or triangles. Serve immediately.
