- 1.25 cup crunchy peanut butter (Creamy also works)
- 0.5 cup honey
- 0.25 cup light brown sugar, packed
- 1 tsp vanilla extract
- 0.25 tsp fine sea salt
- 4 cup crispy rice cereal
- 1 cup dry roasted peanuts, roughly chopped
- 2 cup semisweet chocolate chips
- 2 tbsp coconut oil or unsalted butter
Instructions
- In a large mixing bowl, combine the crunchy peanut butter, honey, light brown sugar, vanilla extract, and fine sea salt.
- Mix all the ingredients well until you have a smooth mixture.
- Add the crispy rice cereal and chopped dry roasted peanuts into the bowl. Gently fold these into the peanut butter mixture until everything is evenly coated.
- In a microwave-safe bowl, combine the semisweet chocolate chips and coconut oil (or butter). Microwave in short intervals, stirring in between, until the mixture is smooth.
- Pour the chocolate over the cereal mixture and stir to combine until everything is well coated.
- Line a baking dish with parchment paper and spread the mixture evenly into the dish. Press down firmly to pack it in.
- Refrigerate for at least 1 hour until it is set.
- Once set, cut into squares or bars and enjoy!
Notes
Press the mixture firmly into the dish for better cohesion. Experiment with different nuts or add-ins. Consider drizzling melted white chocolate on top for added flavor.
