- 1 (34 pound) corned beef brisket with spice packet
- 1 medium yellow onion, quartered
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 large head of cabbage, cored and cut into wedges
- 4 medium carrots, peeled and cut into 2 inch pieces
- 4 medium potatoes, peeled and quartered
- 1 teaspoon caraway seeds (optional)
- Salt and pepper to taste
Instructions
- 1. Rinse the corned beef brisket under cold water. Place the brisket in the crockpot. Sprinkle the spice packet that came with the corned beef over the brisket. Add the quartered onion, minced garlic, and beef broth.
- 2. Cover the crockpot and cook on low for 68 hours, or on high for 34 hours. The beef should be fork tender.
- 3. Add the carrots and potatoes to the crockpot around the corned beef. Sprinkle with salt and pepper. Nestle the cabbage wedges in between the potatoes and carrots. Sprinkle with caraway seeds, if using.
- 4. Cover the crockpot again and cook on low for an additional 23 hours, or on high for 11.5 hours. The vegetables should be tender but not mushy.
- 5. Once everything is cooked, remove the corned beef from the crockpot and let it rest for 1015 minutes before slicing against the grain. Serve the corned beef with the cooked cabbage, carrots, and potatoes.
