Creamy pesto gnocchi is a quick and easy comfort food dish that’s perfect for a weeknight dinner. Pillowy gnocchi are tossed in a rich and flavorful basil pesto cream sauce.

- 1 (16-ounce) package potato gnocchi
- 1/2 cup prepared basil pesto
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese, plus more for serving
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1/4 cup Reserved Pasta Water
Instructions
- Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package directions, usually about 2-3 minutes, or until they float to the surface. Reserve about 1/4 cup of pasta water before draining.
- While the gnocchi is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 30 seconds, or until fragrant, being careful not to burn it.
- Reduce the heat to low and stir in the heavy cream. Simmer for 1-2 minutes, allowing the cream to warm through.
- Stir in the basil pesto and Parmesan cheese. Season with salt and black pepper to taste.
- Add the cooked gnocchi to the skillet with the pesto cream sauce. Toss gently to coat. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
- Serve immediately, garnished with extra Parmesan cheese.
