These Cosmic Brownie Bites are an easy and delicious homemade version of the classic lunchbox treat, perfect for sharing and making memories!

- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup all purpose flour
- 1/2 cup semi sweet chocolate chips
- 1/4 cup heavy cream
- Rainbow sprinkles, for decorating
Instructions
- Preheat oven to 325°F (160°C). Grease a mini muffin tin.
- In a large bowl, whisk together the melted butter, sugar, cocoa powder, and salt until well combined.
- Stir in the vanilla extract. Add the eggs one at a time, mixing well after each addition.
- Gradually add the flour to the wet ingredients, mixing until just combined.
- Fill each mini muffin cup about 2/3 full with the brownie batter.
- Bake for 12 15 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
- Let the brownie bites cool in the muffin tin for 10 minutes before transferring them to a wire rack to cool completely.
- While the brownies are cooling, make the chocolate ganache. Place the chocolate chips in a heatproof bowl. Heat the heavy cream in a small saucepan until simmering. Pour the hot cream over the chocolate chips and let it sit for 1 minute. Then, whisk until smooth and glossy.
- Once the brownie bites are completely cool, spoon a small amount of ganache over each one. Immediately sprinkle with the rainbow sprinkles.
- Allow the ganache to set completely before serving.
