- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cups cooked corned beef, diced
- 3 cups cooked potatoes, diced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- 4 large eggs
- Optional: chopped fresh parsley, ketchup, or hot sauce for serving
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and cook until softened, about 5 minutes.
- Add the diced corned beef and diced potatoes to the skillet. Stir well to combine.
- Season with the salt, pepper, garlic powder, and smoked paprika. Stir again to ensure the spices are evenly distributed.
- Press the mixture down into an even layer in the skillet. This helps create a nice crispy crust.
- Cook for 10-12 minutes, without stirring, until the bottom is golden brown and crispy. Flip the hash in sections and cook for another 5-7 minutes until the other side is also crispy.
- While the hash is cooking, fry the eggs to your desired doneness in a separate pan. We prefer ours sunny side up with a runny yolk!
- Divide the corned beef hash between plates and top each serving with a fried egg.
- Garnish with chopped fresh parsley, if desired. Serve immediately, with ketchup or hot sauce on the side, if you like.
