  • 1 (3-4 pound) corned beef brisket, with spice packet
  • 1 large onion, quartered
  • 4 carrots, peeled and cut into 2-inch pieces
  • 4 celery stalks, cut into 2-inch pieces
  • 1 head of cabbage, cored and cut into wedges
  • 4 medium potatoes, peeled and quartered
  • Water, enough to cover the corned beef
  • 1 cup mayonnaise
  • 2 tablespoons prepared horseradish, or more to taste
  • 1 tablespoon Dijon mustard
  • 1 tablespoon white vinegar
  • 1/2 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. Rinse the corned beef under cold water.
  2. Place the corned beef in a large pot or Dutch oven. Add the onion, carrots, celery, and the spice packet. Cover with water.
  3. Bring to a boil, reduce heat, cover, and simmer for 3-3.5 hours, or until fork tender.
  4. Add the potatoes and cook for 20 minutes.
  5. Add the cabbage and cook for 15 minutes, or until tender.
  6. In a small bowl, whisk together the mayonnaise, horseradish, Dijon mustard, white vinegar, and sugar. Season with salt and pepper.
  7. Remove the corned beef and let it rest for 10-15 minutes before slicing.
  8. Slice the corned beef against the grain. Serve hot with cabbage, potatoes, and horseradish sauce.
