- ¼ cup granulated sugar
- 1 teaspoon salt
- 1 package (2 ¼ teaspoons) active dry yeast
- ¾ cup milk, warmed to 110-115°F
- ¼ cup (½ stick) unsalted butter, melted
- 2 large eggs
- ½ cup (1 stick) unsalted butter, softened
- ¾ cup packed brown sugar
- 2 tablespoons ground cinnamon
- 4 cups powdered sugar
- ½ cup (1 stick) unsalted butter, softened
- ¼ cup milk
- 1 teaspoon vanilla extract
- Blue gel food coloring
- Mini chocolate chip cookies
Instructions
- In a large bowl, whisk together flour, sugar, and salt. Stir in yeast.
- In a separate bowl, combine warm milk, melted butter, and eggs. Add wet ingredients to dry ingredients and mix until a soft dough forms.
- Turn dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.
- Place dough in a greased bowl, turning to coat. Cover and let rise in a warm place for 1-1.5 hours, or until doubled in size.
- While the dough is rising, prepare the filling. In a medium bowl, cream together softened butter, brown sugar, and cinnamon until smooth.
- Once the dough has doubled, punch it down and turn it out onto a lightly floured surface. Roll dough into a 12×18 inch rectangle.
- Spread the cinnamon butter mixture evenly over the dough.
- Starting from the long end, tightly roll the dough into a log.
- Using a sharp knife or dental floss, cut the log into 12 equal slices.
- Place cinnamon rolls in a greased 9×13 inch baking dish. Cover and let rise for another 30 minutes.
- Preheat oven to 375°F (190°C). Bake for 20-25 minutes, or until golden brown.
- While the cinnamon rolls are baking, prepare the frosting. In a large bowl, beat together powdered sugar, softened butter, milk, and vanilla extract until smooth. Add blue gel food coloring and mix until desired shade of blue is achieved.
- Once the cinnamon rolls are baked, let them cool slightly before frosting.
- Spread blue frosting generously over the warm cinnamon rolls.
- Top each cinnamon roll with two mini chocolate chip cookies to resemble Cookie Monster eyes.
