2 cups All-Purpose Flour

1 1/2 tsp Ground Cinnamon for bread

1 tsp Baking Powder

1/2 tsp Baking Soda

1/2 tsp Salt

2/3 cup Vegetable Oil

3/4 cup Packed Brown Sugar

2 large Eggs room temperature

1 1/2 tsp Pure Vanilla Extract

1/2 cup Sour Cream or Plain Whole Milk Greek Yogurt room temperature

1 1/2 cups Fresh Apple peeled and finely diced approximately 1 large apple

1/3 cup Packed Brown Sugar for swirl

2 tsp Ground Cinnamon for swirl

1 tbsp Unsalted Butter melted for swirl

1/2 cup Powdered Sugar sifted for optional glaze

1 tbsp Whole Milk for glaze

1/4 tsp Ground Cinnamon for glaze

1/4 tsp Pure Vanilla Extract for glaze


Instructions

1. Preheat oven to 350°F 175°C. Grease and line 9×5 loaf pan with parchment overhang on long sides.

2. Stir brown sugar, cinnamon, and melted butter for swirl. Set aside.

3. Whisk flour, cinnamon, baking powder, baking soda, and salt.

4. Whisk oil, brown sugar, eggs, and vanilla smooth. Add sour cream or yogurt. Mix combined.

5. Pour wet into dry. Fold just combined. Gently fold in diced apple.

6. Pour half batter into pan evenly. Scatter half cinnamon swirl over surface. Pour remaining batter. Scatter remaining swirl over top.

7. Drag thin knife in 3 to 4 deliberate slow figure-eight passes through entire loaf.

8. Bake 50 to 60 minutes until toothpick clean. Tent with foil after 35 minutes if browning too rapidly.

9. Cool in pan 15 minutes. Lift with parchment. Cool completely.

10. Optionally whisk powdered sugar, milk, cinnamon, and vanilla smooth. Drizzle over cooled loaf.
