Instructions

  1. Prepare the Corn: If using fresh corn, grill, boil or steam it until tender. Cut the kernels off the cob. If using frozen corn, thaw it completely.
  2. Combine the Ingredients: In a medium bowl, gently combine the corn kernels, diced avocado, red onion, red bell pepper, jalapeño (if using), and chopped cilantro.
  3. Dress the Salsa: In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  4. Mix Gently: Pour the dressing over the corn and avocado mixture. Gently toss until everything is well combined.
