Instructions
- 1. Prepare the Chocolate Ganache: Place the 12 ounces of finely chopped chocolate in a heatproof bowl.
- 2. Heat the Cream: In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not boil.
- 3. Pour over Chocolate: Pour the hot cream over the chopped chocolate. Let it sit for 1 minute to soften the chocolate.
- 4. Whisk: Gently whisk the cream and chocolate together until smooth and glossy. Continue whisking until all chocolate is melted and the ingredients are thoroughly combined.
- 5. Add Flavor: Stir in the softened butter, raspberry jam, raspberry extract, and a pinch of salt. Mix until everything is well combined.
- 6. Chill: Cover the bowl with plastic wrap, pressing it directly onto the surface of the ganache to prevent a skin from forming. Refrigerate for at least 4 hours or, preferably, overnight until firm enough to scoop.
- 7. Scoop and Roll: Once the ganache is firm, use a small spoon or melon baller to scoop out tablespoon sized portions. Gently roll each portion between your palms to form a smooth ball.
- 8. Chill Again: Place the rolled truffles on a baking sheet lined with parchment paper and chill in the refrigerator for another 30 minutes to firm up further.
- 9. Melt Coating Chocolate: While the truffles are chilling, melt the remaining 8 ounces of semi sweet chocolate in a double boiler or microwave, stirring frequently until smooth.
- 10. Dip Truffles: Dip each chilled truffle into the melted chocolate, ensuring it is fully coated. You can use a fork or dipping tools to make this easier.
- 11. Garnish: Immediately sprinkle the dipped truffles with crushed freeze dried raspberries or roll them in cocoa powder, if desired.
- 12. Set: Place the decorated truffles back on the parchment lined baking sheet and refrigerate for at least 15 minutes, or until the chocolate coating is set.
