Description

The most easy triple-chocolate Chocolate Protein Muffins made by whisking 1 1/2 cups gluten-free flour 1/4 cup chocolate protein powder 3 tbsp cocoa powder 1 cup sugar baking powder salt and baking soda then adding room temperature eggs oat milk melted cooled butter and vanilla whisking until just combined folding in 1 cup chocolate chips scooping 3 tbsp into 12 lined wells topping with additional chips optionally resting 10 minutes and baking at 350°F for 23 to 27 minutes until toothpick clean cooling in pan 10 minutes then on wire rack. A completely extraordinary triple chocolate protein muffin recipe.


Ingredients

1 1/2 cups Gluten-Free 1:1 Baking Flour

1/4 cup Double Chocolate or Chocolate Whey Protein Powder

3 tbsp Unsweetened Cocoa Powder

1 cup Granulated Sugar

1 tsp Baking Powder

1/4 tsp Salt

1 tsp Baking Soda

1/3 cup Unsalted Butter melted and cooled

2 large Eggs room temperature

1 1/2 tsp Pure Vanilla Extract

1 cup Oat Milk room temperature

1 cup Chocolate Chips plus additional for topping


Instructions

1. Preheat oven to 350°F. Line 12-count muffin pan with liners.

2. Whisk gluten-free flour, baking powder, baking soda, salt, chocolate protein powder, cocoa powder, and sugar in large bowl.

3. Add room temperature eggs, room temperature oat milk, melted cooled butter, and vanilla. Whisk until just combined. Do not overmix.

4. Fold in 1 cup chocolate chips with spatula.

5. Scoop 3 tbsp batter into each lined well.

6. Top each with additional chocolate chips pressed gently in.

7. Optionally rest filled pan 10 minutes before baking.

8. Bake 23 to 27 minutes until toothpick comes out clean.

9. Cool in pan 10 minutes. Transfer to wire rack. Cool completely.
