6 oz 170g High-Quality Dark Chocolate 60 to 70% cocoa finely chopped

1/2 cup Unsalted Butter cubed

2 large Eggs room temperature

2 large Egg Yolks room temperature

1/4 cup Granulated Sugar

1 tsp Pure Vanilla Extract

2 tbsp All-Purpose Flour

Pinch of Salt

Cocoa Powder for dusting ramekins

Powdered Sugar or Vanilla Ice Cream for serving


Instructions

1. Preheat oven to 425°F 218°C. Generously butter four 6-ounce ramekins. Dust thoroughly with cocoa. Place on baking sheet.

2. Melt dark chocolate and butter together until smooth. Cool 5 minutes.

3. Beat eggs, egg yolks, sugar, and vanilla on medium-high full 4 minutes until thick pale and ribbon-forming.

4. Pour cooled chocolate into egg mixture. Fold gently.

5. Add flour and salt. Fold just combined. Do not overmix.

6. Divide equally among ramekins filling 3/4 full.

7. Bake 425°F exactly 12 minutes for most flowing or 13 for slightly less. Edges must appear set center still jiggly. Do not overbake.

8. Cool exactly 1 minute. Run thin knife around inside edge.

9. Place serving plate over ramekin. Invert confidently in one decisive motion. Serve immediately.
