1 cup Semi-Sweet Chocolate Chips divided

Flaky Sea Salt optional


Instructions

1. Squeeze pumpkin puree dry with paper towels pressing firmly and replacing until maximum moisture removed. Set aside.

2. Beat softened butter, brown sugar, and granulated sugar medium-high 2 to 3 minutes light and creamy. Add egg yolk only, vanilla, and squeezed-dry pumpkin. Mix combined.

3. Whisk flour, cornstarch, pumpkin pie spice, cinnamon, baking soda, and salt. Add on low just combined.

4. Fold 3/4 cup chocolate chips. Cover and refrigerate 30 minutes.

5. Preheat oven to 375°F 190°C. Scoop generous balls 2 to 3 inches apart. Press remaining chips over tops. Sprinkle sea salt.

6. Bake 10 to 12 minutes until edges golden and centers slightly underdone.

7. Cool 5 minutes on sheet. Transfer to rack.
