Delicious caramel coconut bars with a rich flavor and satisfying crunch, perfect for any gathering.
Ingredients

- 1.5 cups all-purpose flour
- 0.25 cup granulated sugar
- 0.75 cup unsalted butter (chilled and cut into small cubes)
- 0.25 tsp fine sea salt
- 1 tsp vanilla extract
- 3 cups sweetened shredded coconut (lightly toasted)
- 11 oz soft caramel candies (unwrapped)
- 3 tbsp heavy cream
- 2 tbsp unsalted butter
- 0.25 tsp kosher salt (for caramel coconut mixture)
- 1.25 cups semisweet chocolate chips (reserve 0.25 cup for drizzle)
- 1 tsp coconut oil (or neutral oil; helps thin chocolate)
- 1 pinch flaky sea salt (optional garnish)
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine flour, granulated sugar, and fine sea salt. Add the chilled butter and mix until crumbly. Stir in the vanilla extract.
- Press the mixture evenly into a greased 9×13-inch baking dish. Bake for about 15-20 minutes, or until lightly golden. Let it cool slightly.
- In a saucepan over low heat, combine unwrapped caramel candies, heavy cream, 2 tablespoons of butter, and kosher salt. Stir until smooth, then remove from heat and add the toasted shredded coconut.
- Spread the caramel coconut mixture evenly over the baked base.
- Melt the semisweet chocolate chips with coconut oil. Drizzle some of this chocolate over the caramel coconut layer.
- Allow the bars to cool completely. Sprinkle flaky sea salt on top if desired, and then cut into squares or bars.
Notes
Serve these bars with vanilla ice cream or a dollop of whipped cream for an extra treat. Store in an airtight container for up to a week.
