6 large Ripe Peaches peeled and sliced

1/2 cup 1 stick Unsalted Butter for browning

3/4 cup Granulated Sugar for peach filling

2 tbsp Granulated Sugar for batter

1 cup All-Purpose Flour

1 1/2 tsp Baking Powder

1/4 tsp Salt

1/2 cup Whole Milk

1 tsp Ground Cinnamon

1/4 tsp Ground Nutmeg

1 tsp Pure Vanilla Extract

1 tbsp Fresh Lemon Juice

Vanilla Ice Cream for serving


Instructions

1. Brown butter in light-colored saucepan over medium heat stirring constantly until golden and nutty aroma. Remove immediately. Cool slightly.

2. Peel pit and slice 6 ripe peaches. Toss with 3/4 cup sugar, lemon juice, cinnamon, and nutmeg. Macerate 10 minutes.

3. Whisk flour, baking powder, salt, and 2 tbsp sugar in bowl. Stir in cooled brown butter, milk, and vanilla until smooth and thick. Do not overmix.

4. Preheat oven to 350°F 175°C.

5. Pour batter into greased 8×8-inch dish. Spread evenly.

6. Spoon peach mixture and all juices gently over batter. Do not stir.

7. Bake 40 to 45 minutes until crust golden brown. Tent with foil if browning too fast.

8. Rest 10 minutes.

9. Serve warm with generous scoop of vanilla ice cream.
