Delicious and healthy Blueberry Swirl Yogurt Bites, perfect for on-the-go snacking or as a refreshing dessert.
Ingredients

- 2 cups plain Greek yogurt
- 1 cup fresh blueberries (divided)
- 2 tablespoons honey (divided)
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- 0.5 teaspoon lemon zest (optional)
- 0.125 teaspoon fine sea salt
- 0.75 cup granola (optional)
Instructions
- Blend half of the fresh blueberries (about 1/2 cup) in a small bowl until smooth.
- In a larger bowl, mix the Greek yogurt, 1 tablespoon of honey, vanilla extract, lemon juice, lemon zest (if using), and fine sea salt until well combined.
- Fill a silicone ice cube tray or muffin tin with the yogurt mixture, about halfway full.
- Spoon a little of the blueberry puree on top of the yogurt in each compartment and swirl using a toothpick.
- If desired, add some granola on top for added crunch.
- Place the tray in the freezer and let freeze for at least 4 hours or until solid.
- Once frozen, pop the yogurt bites out of the tray and store in an airtight container in the freezer.
Notes
These yogurt bites are versatile; use different fruits or add cocoa for variations. Adjust sweetness with honey to taste.
