Ingredients

  • 1 medium head of green cabbage
  • 2 tablespoons olive oil
  • 2 tablespoons white miso paste
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Sesame seeds, for garnish
  • Chopped green onions, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Remove any outer leaves that are wilted. Cut the cabbage through the core into approximately 1-inch thick “steaks.”
  3. In a small bowl, whisk together the miso paste, rice vinegar, maple syrup, sesame oil, minced garlic, and red pepper flakes (if using).
  4. Brush both sides of each cabbage steak with the miso glaze mixture.
  5. Place the cabbage steaks on a baking sheet lined with parchment paper.
  6. Roast for 20-25 minutes, flipping halfway through, or until the cabbage is tender and the edges are nicely browned and blistered.
  7. Remove from the oven and garnish with sesame seeds and chopped green onions. Serve immediately.
