- 8 oz cream cheese, softened
- 1 cup sour cream
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup cherry pie filling
- 1 cup chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- Whipped cream for topping
- Chocolate shavings for garnish
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix the chocolate cookie crumbs with melted butter. Press this mixture into the bottom of a springform pan to form the crust.
- In another bowl, beat the cream cheese until smooth. Then, add the sour cream, sugar, eggs, and vanilla extract. Mix until everything is well combined.
- Pour half of the cheesecake batter over the crust. Spoon dollops of cherry pie filling on top. Pour the remaining batter over this and use a knife to swirl the mixture for a marbled effect.
- Bake for 50-60 minutes or until the center is set but still slightly jiggles.
- Let the cheesecake cool before refrigerating for at least 4 hours or overnight.
- Before serving, top it with whipped cream and sprinkle chocolate shavings on top.
Notes
Ensure the cream cheese is softened to room temperature for easier mixing. Don’t skip refrigerating the cheesecake for at least 4 hours to set properly.
