- 2 pounds ground bison
- 1 cup breadcrumbs (Italian seasoned)
- 1/2 cup finely chopped onion
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 large egg, lightly beaten
- 1/4 cup milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup balsamic vinegar
- 1/4 cup brown sugar
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- In a large bowl, combine bison, breadcrumbs, onion, parsley, garlic, egg, milk, Worcestershire sauce, oregano, salt, and pepper. Mix gently.
- Transfer to loaf pan, press evenly.
- In a saucepan, whisk balsamic vinegar, brown sugar, Dijon mustard, and olive oil.
- Simmer over medium heat for 10 to 12 minutes, until thickened.
- Pour half the glaze over the meatloaf.
- Bake for 60 to 70 minutes, until internal temperature reaches 160°F (71°C).
- Let rest 10 minutes before slicing. Drizzle with remaining glaze before serving.
