- 2 cups fresh corn kernels
- 1 cup milk
- 1/2 cup heavy cream
- 3 large eggs
- 1/4 cup sugar
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup grated sharp cheddar cheese
- 1/4 teaspoon nutmeg
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the fresh corn, milk, heavy cream, eggs, sugar, butter, flour, salt, and vanilla extract until well combined.
- Stir in the grated cheddar cheese and nutmeg until evenly distributed.
- Pour the mixture into a greased baking dish.
- Bake for about 45-50 minutes or until the top is golden brown and the pudding is set.
- Remove from the oven and let it cool slightly before serving.
Notes
Use fresh corn for the best flavor. If out of season, frozen corn can work too, but make sure to thaw and drain it first.
