Ingredients
1 to 1½ pounds pizza dough
Olive oil for brushing and drizzling
Cornmeal for dusting the pan
⅔ cup pizza sauce
¾ cup shredded mozzarella cheese
¾ cup shredded provolone cheese
¼ cup grated Parmesan cheese
1 garlic clove, minced
1 to 2 cups fresh spinach
¾ cup cherry tomatoes, halved
Sea salt to taste
Fresh basil leaves
Red pepper flakes
Instructions
- 1. Let the dough rest at room temperature for 1 hour if cold.
2. Preheat oven to 450°F. Oil a 13×9 inch sheet pan and dust with cornmeal.
3. Stretch the dough to fit the pan. Let rest if it resists.
4. Sauté garlic and spinach with olive oil and salt until wilted. Set aside.
5. Spread pizza sauce over the dough, leaving a small border.
6. Top with mozzarella and provolone cheese.
7. Add spinach, cherry tomatoes, and Parmesan. Drizzle with olive oil.
8. Bake for 20 to 25 minutes until golden and bubbly.
9. Cool for 5 minutes. Garnish with basil and red pepper flakes. Slice and serve.
Notes
Let dough fully warm up before stretching.
Shred cheese fresh for better melt and taste.
Do not overload with toppings to prevent soggy crust.
