- 2 teaspoons unflavored powdered gelatin
- 3 tablespoons cold water (for blooming gelatin)
- 1 cup whole milk
- 0.5 cup heavy cream (for custard)
- 1 cup heavy cream (for whipping)
- 0.5 cup granulated sugar (divided use)
- 4 large egg yolks
- 2 teaspoons pure vanilla extract
- 0.125 teaspoon fine sea salt
- 1 tablespoon powdered sugar (for sweetening whipped cream)
- 1 tablespoon dark rum (optional; or kirsch)
- 1 cup fresh berries (for serving, optional)
- 0.25 cup fresh mint leaves (for garnish, optional)
Instructions
- In a small bowl, combine the unflavored powdered gelatin with 3 tablespoons of cold water. Let it sit for about 5 minutes until it blooms.
- In a saucepan over medium heat, combine whole milk, 0.5 cup of heavy cream, and 0.25 cup of granulated sugar. Stir until the sugar dissolves.
- In a separate bowl, whisk together the egg yolks. Slowly pour in the warm milk mixture while whisking continuously to temper the yolks.
- Return the mixture to the saucepan. Cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon. Remove from heat.
- Stir in the bloomed gelatin, vanilla extract, and fine sea salt until everything is fully combined. Allow the custard to cool slightly.
- In a separate mixing bowl, whip the remaining 1 cup of heavy cream with the remaining 0.25 cup of sugar until soft peaks form. Gently fold the whipped cream into the cooled custard mixture until smooth and creamy.
- Pour the mixture into serving dishes and refrigerate for at least 240 minutes or until firm.
Notes
Make sure the gelatin is completely dissolved before adding it to avoid lumps. Allow custard to cool before folding in whipped cream.
