95g Powdered Sugar

1/4 tsp Salt

220g All-Purpose Flour

120g Chopped Pistachios for crust

400g Store-Bought Filo Dough

120g Finely Chopped Pistachios for baklava topping

75g Unsalted Butter melted and cooled for baklava

45g Granulated Sugar

1 tsp Lemon Juice

30g Water

50g Honey for baklava

675g Full-Fat Cream Cheese room temperature

125g Honey for filling

2 large Eggs room temperature

1 Egg Yolk room temperature

120g Sour Cream 15 to 20% fat room temperature

1/4 tsp Salt for filling

Extra Honey and Chopped Pistachios for garnish


Instructions

1. Preheat oven to 350°F.

2. Beat softened butter, powdered sugar, and salt until smooth and creamy.

3. Add flour and chopped pistachios and mix until combined. Press evenly into a greased 9-inch springform pan.

4. Bake crust 10 to 12 minutes until lightly golden. Cool completely.

5. Layer filo sheets on a parchment-lined baking sheet brushing each with melted butter.

6. Scatter finely chopped pistachios mixed with sugar over the top. Drizzle with lemon juice, water, and honey.

7. Bake baklava at 350°F for 20 minutes until deeply golden and crisp. Cool completely then break into pieces.

8. Beat room temperature cream cheese until completely smooth, about 2 minutes.

9. Add honey, eggs, egg yolk, sour cream, and salt. Mix on low until just combined. Do not overmix.

10. Pour filling over cooled crust and smooth the top.

11. Arrange baklava pieces over the surface of the filling.

12. Bake 40 to 45 minutes until edges are set and center has a gentle wobble.

13. Turn oven off and cool cheesecake inside oven with door ajar for 1 hour.

14. Refrigerate at least 4 hours or overnight before serving.

15. Drizzle with extra honey and scatter chopped pistachios before serving.

Notes

All cream cheese, eggs, and sour cream must be fully at room temperature before mixing.

Work quickly with filo dough and keep unused sheets covered with a damp towel.

Cool cheesecake gradually inside the turned-off oven to prevent cracking.
