- For the Crust:
- 1 ½ cups graham cracker crumbs
- 5 tablespoons (70g) unsalted butter, melted
- ¼ cup granulated sugar
- For the Filling:
- 32 ounces (900g) cream cheese, softened
- 1 ½ cups granulated sugar
- ½ teaspoon vanilla extract
- 4 large eggs, at room temperature
- 1 cup sour cream
- 12 ounces fresh raspberries
Instructions
- Preheat oven to 325°F (160°C). Wrap the bottom of a 9-inch springform pan with aluminum foil.
- Combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of the pan.
- Bake crust for 10 minutes. Remove from oven and cool slightly.
- Beat cream cheese and sugar until smooth. Beat in vanilla.
- Add eggs one at a time, beating well after each addition. Stir in sour cream.
- Gently fold in most of the raspberries, saving some for topping.
- Pour the filling over the prebaked crust.
- Place the springform pan inside a larger baking pan. Pour hot water into the larger pan halfway up the sides of the springform.
- Bake for 70 80 minutes, until the edges are set but the center still jiggles.
- Turn off the oven but leave the cheesecake inside with the door slightly ajar for 1 hour.
- Remove the cheesecake from the water bath and let it cool completely.
- Refrigerate for at least 4 hours, or overnight.
- Top with remaining raspberries before serving.
