Description

A delicious and healthy baked eggplant dish that is versatile enough to serve as a snack or side dish.

Ingredients

Scale
  • 1 large eggplant
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/4 cup breadcrumbs (optional)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the eggplant into 1/2-inch thick slices.
  3. In a bowl, mix together olive oil, salt, pepper, garlic powder, and paprika.
  4. Brush both sides of the eggplant slices with the oil mixture.
  5. If using, sprinkle breadcrumbs and Parmesan cheese on top of the slices.
  6. Arrange the slices on a baking sheet lined with parchment paper.
  7. Bake for 25-30 minutes, flipping halfway, until golden and crispy.
  8. Serve warm as a snack or side dish.

Notes

Choose a fresh, firm eggplant for the best results. Don’t skip the salting step; it helps remove excess moisture and bitterness from the eggplant.
