- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup unsweetened almond milk (or any milk)
- 1/2 cup hot sauce (such as Frank’s RedHot)
- 1/4 cup melted butter (or vegan butter)
- 1 tablespoon white vinegar
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional, for extra heat)
- 1/2 cup Greek yogurt or sour cream (or vegan sour cream)
- 2 tablespoons milk (or plant based milk for vegan option)
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dill, chopped (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together flour, garlic powder, paprika, salt, and pepper.
- Gradually add milk, whisking until smooth.
- Add cauliflower, toss to coat.
- Arrange cauliflower in a single layer on the baking sheet.
- Bake for 20-25 minutes, flipping halfway through.
- In a saucepan, combine hot sauce, melted butter, vinegar, garlic powder, and cayenne pepper (if using). Heat over low heat.
- Transfer baked cauliflower to a clean bowl. Pour buffalo sauce over cauliflower and toss.
- Return saucy cauliflower to the baking sheet. Bake for 5-10 minutes.
- Prepare the dip: whisk together Greek yogurt, milk, lemon juice, garlic powder, and dill (if using).
- Serve immediately with the dip (optional).
