Description
Soft, chewy Bailey’s Irish Cream Cookies with a decadent Irish cream glaze. A perfect treat for St. Patrick’s Day or any occasion!

- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup Bailey’s Irish Cream
- 2 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups powdered sugar
- 3–4 tablespoons Bailey’s Irish Cream
- Green sprinkles (optional)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and Bailey’s Irish Cream.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
- Drop by rounded tablespoons onto the prepared baking sheets.
- Bake for 10-12 minutes, or until the edges are lightly golden brown.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- While the cookies are cooling, prepare the glaze: In a bowl, whisk together the powdered sugar and Bailey’s Irish Cream until smooth. Add more Bailey’s if needed to reach your desired consistency.
- Once the cookies are completely cool, drizzle them with the Bailey’s glaze and sprinkle with green sprinkles, if desired.
- Let the glaze set completely before serving!
